Recipe of the Month
Instructions: Preheat oven to 400 degrees F and line a baking sheet with parchment paper/ Cut the squash in half and scoop out the seeds. Cut the onion into quarters. Place the squash and the onion on the baking sheet and drizzle with 1 tablespoon of the olive oil and pinches of salt and pepper. Arrange the squash and onions cut-side down. Wrap the garlic in foil and place on the baking sheet. Roast for 40-50 minutes, or until the squash is soft and the onion is nicely browned. Scoop the flesh from the squash and place in a blender with the onion, peeled garlic, vegetable broth, miso paste, vinegar, and the remaining 2 tablespoons olive oil. Blend until creamy, about 1 minute Season to taste with salt and pepper. Serve with a drizzle of oilve oil, and a spoonful of coconut milk, if using. *Source: Paula Deen

Ingredients: 1 (2-pound) butternut squash1 1 small yellow onion3 3 tablespoons extra-virgin olve oil 5 unpeeled garlic cloves 2 cups vegetable broth 1/4 tablespoons white miso paste 1 teaspoon white wine vinegar Sea salt and freshly ground black pepper coconut milk for garnish (optional)
