Greeting fellow Virginia ACFSA members, First off, I would like to thank each of you that attended the Region 1 conference in Charlottesville. Judging by the evaluation forms everyone filled out, this was one our best conferences yet. The conference committee is taking a short break to recuperate from the ordeals of planning, but it will be out scouting the Hampton Roads area later this summer for next year’s conference location. If you have any suggestions for conference themes or locations, please let me know. Speaking of conferences, the ACFSA National Conference in Memphis, TN will be here before you now it. I can share with all of you that the agenda has been finalized, the speakers are confirmed, the vendors are continuing to sign up, and the entertainment is looking good. Remember that the early bird registration ends July 31, so if you don’t want to end up paying $50 extra be sure to get your registration in by the end of the month. Although not present for the swearing in ceremony, Karis Antigo was elected as our chapter Secretary. Karis has been filling the role of interim-secretary for some time now and the board is glad that she will be continuing to do so. Karis has over six years of food service experience and has a huge drive to succeed in our industry. She is currently the Asst. Food Operations Director at Fluvanna Correctional Center for Women and had been with the Virginia Dept. of Corrections since 2015. Your OCD is a welcome asset to the board, by the way. I would also like to take this opportunity to thank our outgoing President-Elect, Monica DeGraphenried. Monica has worked tirelessly the last two years in her position and is one of the best treasurers we have ever had. It was a pleasure working with you Monica, I know I can still count on you to support the chapter when needed.

Members learn about inmate mental health
During the July meeting, held at the Albemarle Charlottesville Regional Jail, Juanita Morris, the facility's Director of Health Services, presented about inmate mental health issues. She gave members a deeper understanding of issues such as alcohol withdrawal, bipolar disorder, schizophrenia, suicide, communication, and more.
In the recent board elections, ACFSA-VA members voted in large numbers to confirm the composition of the next board. Combined with some changes as a result of members leaving the board/organization, your new board for 2019-2020 is as follows: President: Justin Webb Secretary: Karis Antigo Past President/R1 Director: Julie Hobbs Thanks to all who voted and thank you for your support of the ACFSA-VA Board!

Governor Ralph Northam visited the Academy for Staff Development in Crozier on May 7. John Proctor and his culinary team created an incredible spread to welcome him and honored guests to the 2019 Re-entry Summit. Proctor's squad had to be meticulous in prep, as they knew they would have only 10 minutes in the space to convert the buffet line from a breakfast set up. In typical fashion, the team completed its work with time to spare, and the finished product was a thing a of beauty, fitting for a visit of the Governor and other state dignitaries.

Greetings, fellow members! For this article I will not discuss retirement. I want to give you some little-known facts. Did you know: •The mummy of Pharaoh Rameses II has a passport • Over million earths would fit inside the sun. • The name of the space between your eyebrows is "nasion". • Flying fish jump out of the water at 20 mph or more, and can glide for over 500 feet. • Our eyes are always the same size from birth but our nose and ears never stop growing. • If there are two full moons in a month the second one is called a blue moon. • Astronauts actually get taller when in space. •Most rechargeable batteries can be recharged up to 1000 times. •Elephants are the only mammal that can't jump. • Ketchup was once sold as a medicine. • Mosquitoes prefer to bite people with type O blood. • You would weigh less on the top of a mountain than at sea level. •Manhattan Island was once home for as many different species as Yellowstone National Park. • Theodore Roosevelt was the only president blind in one eye. • The Statue of Liberty wears a size 879 sandal. Greetings everyone, It has already been a long hot summer and it isn’t even half way over. I have been doing my best to stay cool, but, as “Yankee,” this weather has been very hard to handle. All I can say is thank heavens for air conditioning! I hope that everyone is making plans to attend the upcoming national conference in Memphis September 23-25. The committee is working hard on the agenda and from what I have seen they have gotten a lot of great training planned for us. One of those training session will be taught by Brian Flaherty and me. I am very excited about teaching everyone about the Dos and Don’ts of inspections. For those of you that know Brian, he has planned a very entertaining session and I hope we can pull off what he has in mind. I won’t give anything away. You will have to attend the session to see what we have in store for you. This year is the 50th anniversary of ACFSA and there will be many past presidents in attendance. If you are going, I urge you to stop and talk to each of them. They have many years in correctional food service and plenty of stories to tell about how far we have come in 50 years. Virginia again will be having our scholarship raffle with two $500 cash prizes. For it to be a success, we will need all the members attending to help sell tickets. More information will be coming out soon about meeting prior to the start of the conference and figuring out who will work the Virginia table and the floor during the vendor reception. Come prepared to sell. Remember all proceeds go towards providing scholarships for member to attend conferences. The more money we make the more we can award. One last thing– I would like everyone to know who is on the new Virginia board that was sworn into office at our July 18th meeting: • I have had to return to the board as Past President since Jessica Harlow has left corrections. I will now be wearing two hats as both you national Region I Director and as the chapter Past President. • Justin Webb will remain as President for another two years. • Karis Antigo is continuing as Secretary after winning the election. Thanks to Karis for stepping up and running for office. Justin and I look forward to working with you and are ready to have some new blood and ideas from you to move our chapter to a higher level of excellence. Stay cool and see everyone in Memphis!

Region 1 Conference a Success
The Region 1 Conference was held May 23-25 on the grounds of the University of Virginia at the Darden School of Business. Attendees were treated to insightful presentations, a vendor show, great networking, and fun events, including a pizza cook-off (see next page). Thanks to the conference committee and everyone who helped make the conference a great success.

Christene Salyers and Meaghan Borger put up a well-executed and delicious buffalo chicken pizza.
Carla White, (back), Superintendent of the Rappahannock Juvenile Center, celebrates a great pizza cooking contest made up completely of her teammates Donald Embrey, Jewel Henderson, Christene Salyers, Meaghan Borger, Vincent Burton, and William Ross. All conference attendees got a taste and were impressed with the skills on display. Teams had limited time and budget to create their masterpieces and used the ovens in the kitchen at Darden.

Greetings ACFSA Virginia Chapter and Friends abroad!! I’m excited to report to each of you that your hard work paid off. This year's Region I Conference has been named the best yet hands down. If you missed this one, you missed the best one yet to date! Due to being a holiday weekend, vacations and Ramadan we were faced with many challenges, but we stayed the course and we won! Evaluations for this conference were the best by far based on past conferences. Many first time attendees assured us they would be back and the regulars who attended said the agenda far exceeded past conferences. The location was awesome, the food was excellent, the entertainment (Keith Bryant and Steve Hoge) was on time and the pizza contest was so much fun (and tasty). With Kavin James leading the way, one would expect the energy of the speakers to take a dive in comparison but the energy remained and continued to build throughout the conference. Topics were spot on and held the attention of all in attendance until the very end. I would personally like to thank the conference committee (Justin Webb, Julie Hobbs, Mike Robertson and Monica DeGraphenried) for an outstanding job. After a much needed break we have begun plans for next years conference and hope to have dates and location out in the near future. We appreciate all of the vendors who so faithfully participated in this years conference, the speakers and all those who made the sacrifice to attend. We couldn’t have done it without the team effort that everyone contributed to. So with that being said, we have our work cut out for us to top this conference next year! So start making your plans now and plan to bring someone with you. A co-worker, your administrator, or even an interested friend. Region 1's Best Conference Yet
Ingredients: • Cookie Dough Crumble 4 tablespoons unsalted butter, plus enough to grease dish 1 cup all-purpose flour Rounded 1/4 teaspoon baking soda 1/4 teaspoon fine salt 1/3 cup packed light brown sugar 1/3 granulated sugar 1/2 teaspoon pure vanilla extract 1 large egg 1 cup semisweet chocolate chips • Cherry Filling 6 cups pitte cherries 1/4 cup granulated sugar 2 tablespoons all-purpose flour 2 teaspoons pure vanilla extract Directions: For the crumble, preheat oven to 350 degrees F. Grease 9 inch square baking dish. Whisk together flour, baking soda, and salt, in a small bowl and set aside. Microwave the butter in a medium microwave-safe until completely melted. Cool slightly. Stir the brown sugar, granulated sugar, vanilla, and egg into the melted butter. Stir the flour mixture into the butter-sugar mixture until just combined. Stir in the chocolate chips. For the cherry filling, toss together the cherries, granulated sugar, flour, vanilla, and salt in a large bowl. Transfer to the prepared baking dish and toss the cookie dough crumble over the cherry filling. Bake until the filling is hot and bubbly and the top is crisp and golden brown, 50 to 55 minutes. Let cool for a few minutes. Dish up spoonfuls and top with a scoop of vanilla ice cream if desired.
Baked Eggs in Hasbrown Cups By Ree Drummond Ingredients: 6 to 8 medium Russet potatoes Salt and ground pepper Nonstick cooking spray 24 large eggs Directions: Preheat oven to 400 degrees F. Bake potatoes until tender, 45 minutes to an hour. Allow to cool, then peel and grate. Season well with salt and pepper. Adjust oven temperature to 450 degrees F. Spray to 12-hole muffin pans with nonstick cooking spray. Scoop 3-4 tablespoons of potatoes into each muffin hole. Use your fingers to gently press down the sides and bottom to make a nest. Spray again with cooking spray. Then bake for 15 to 20 minutes. Allow the nests to cool, and lower the oven temperature back to 400 degrees F. Then crack an eggs into each nest. Sprinkle with salt and pepper and bake until the whites are set, about 15 minutes.
